I am still trying to be easy on myself about this process. I worked on the medicine cabinet or in our case it feels like a closet. I cleaned it up and took some stuff to be destroyed. I also used items to make up a first aid kit for the car and set aside some for our trip to FL this summer.
Phillip's project car is coming home so we worked on cleaning out the garage this weekend to make room. I listed a bunch of stuff on my trade site as well as sale sites and craigslist. Tonight I am meeting someone to trade some canning jars for tomato, basil and broccoli plants.
Last night I managed to clean out one dresser drawer, it was only one drawer but that is one less drawer that I have to clean out.

Last week of March
You can tell in my last post when Phillip arrived home. This week I need to work on cleaning out the freezer and getting it ready for April's grocery run.
I have not managed to make a meal plan and have just been pulling stuff out of the fridge and freezer for meals. This is not the best method for me since it leaves me in a panic when I get home but it is how this week is going.
Sunday Mar 25th:
Breakfast: Donuts
Lunch: Chicken Enchilada with friends
Dinner: Brinner! Pancakes, bacon and scrambled eggs
Monday Mar 26th:
Breakfast: kolaches
Lunch: Ham and cheese sandwich, diced peaches and chips
Dinner: Baked Gnocchi with Bacon, Tomato and Mozzarella from Simply Delicious. I used leftover bacon for this so I skipped the cooking bacon step. Because I skipped that step I dug out the jar of bacon grease from the fridge and used a smidge to cook the paprika and garlic. I followed the recipe from there.
Tuesday Mar 27th:
Breakfast: kolaches
Lunch: Chicken strips with a friend
Dinner:Pulled Pork Enchiladas from Recipe Tin Eats. No picture but this was on the menu last night using the last of the leftover pork and some leftover tortillas from Sunday lunch.
Wednesday Mar 28th:
Breakfast: cereal
Lunch:Black Pepper chicken and Lo-Mein
Dinner: Fish Sticks and steamed rice
Thursday Mar 29th:
Breakfast: cereal
Lunch: Ham and Cheese sandwich with banana chips and diced peaches
Dinner: Steamed some broccoli, mixed it with the leftover rice and leftover chicken. I covered in cheese and baked.

Second Round of Letters
I had a previous new year's resolution to write more letters and managed to send everyone in my address book a letter that year. I also picked up a couple of pen pals in the process and have decided to send another round.
There have been several people really on my mind lately and I feel like another round of letters will help them as well as me out.

2018 Resolutions 3 Months In
I have been working on my resolutions for 3 months now. In case you have not read that post or have forgot my resolutions while accomplishing yours they are:
For 2018 I am working on the following:
1.) Minimizing our possessions
2.) Spend more time present with friends and family
3.) Finish the backyard and spend a huge amount of time out there with the boys.
4.) Read the stack of books next to my bed
5.) Hike more
6.) Bike ride a lot with the boys now that I have a helmet.
Progress on #1 is going WAAAAAYYYYY slower than I hoped. We have passed on, traded and sold a lot of the larger items we wanted to get rid of. I have also made many trips to the thrift store with boxes of donations. There is still a ton of stuff that needs to get out of the house. This weekend I plan on dropping stuff at various charities and getting by the kids resale shop. This will still leave a large box of stuff I am working on trading and selling. I also have a lot of stuff still to go through and hopefully get rid of. Lately I have to keep telling myself that it is a year long resolution and speed is not everything. It will get taken care of.
Progress on #2 is going better. I no longer say no right off the bat when we are invited to do things. The stuff from #1 is going to be there when we get home so it will not hurt to go have fun with friends.
Progress on #3 is just getting started since the weather is warming up. I spent several hours over the last couple of weekends working on clean up. The back yard is like the house and I somehow want it to magically come together in an instant but it just takes lots of labor initially.
Progress on #4 is slow but I knew this one would be. I am on the last of the library books I kept checking out on a loop. I have been looking to see if some of the stack are available in audio form from the library as this will enable me to breeze through them faster. I have only moved one out of the stack thus far but I am optimistic that much progress will be made.
Progress on #5 has not happened yet but I do have plans for tomorrow night which I hope work out. A state park within a short distance of us is doing a guided night hike tomorrow night.
Progress on #6 is in progress. The boys have been riding more and Phillip has even gone out on the tandem with Clark but I have not got my bike out yet.

Last Week of February, First Days of March
The last week of the month is always putting together random ingredients and hoping great meals come out of it.
Sunday: These 2 helped me make some no bake cookies and dark chocolate pumpkin bread. Due to all the baking I just did not feel like making a huge dinner. I baked the last frozen pizza that was still hanging out in the freezer.
Monday: Creamy Spinach and Tortellini Soup from Life Made Simple which Phillip really liked. I was on the fence and may still be as to my opinion.
Tuesday: Paleo Slow-Cooked Italian Pot Roast by Trina's Paleo newbie , garlic butter asparagus, ranch carrots. I was out of fresh mushrooms so I used some dehydrated and just upped the liquid.
Wednesday: Bulogi Korean Beef by Copper House Happy using the leftover roast and steamed rice. I put a smidge too much ginger in this time.
Thursday: Pigs in a blanket with homemade shells and cheese.
Friday: One Pot Thai Chicken and Rice Dish by Chew Out Loud. I used up the leftover chicken I had in the freezer and leftover rice.
Saturday: Sooo when it was time to cook dinner I could not remember what I was planning making the lettuce wraps from. After much staring in the fridge, freezer and pantry I went with meat loaf muffins, roasted potatoes and sauteed asparagus. I also had started eating before I remembered to take the picture.
Books Feb 3rd Through Mar 6th
The effort to read the stack next to my bed has brought up a lot of vintage books from authors I have not previously read. I am choosing to listen to as many as I can since this goes much faster for me that reading print books.
First up this month on audio was The Man in the Brown Suit by Agatha Christie. I have always loved Agatha Christie but had not read this one before or this series for that matter. The vintage feel of this was great while it was a bit confusing as first. This book is not told from the view point of the investigator which was something different. Braving the Wilderness: The Quest for True Belonging and the Courage to Stand Alone by Brene Brown was next and I surprisingly liked this more than a previous one by this author. It as the last was really short but heavy on subject matter. Another vintage book was up next. I chose Cover Her Face by P.D. James an author I had never heard of until a collection of short stories was published last year. This is an author that I enjoy and will likely listen to a lot more of in the coming months. Still in the vintage vein and one I heard recommended on the What Should I Read Next podcast was up next. My Man Jeeves by P.G. Wodehouse was that recommendation. I did not think it was the best thing ever but it was an easy and relatively short listen. The next book I listened to was also a recommendation from What Should I Read Next and an author I had not heard of previously. This book was stellar and Still Life by Louise Penny will lead to me reading all of her books in this series. A Man Called Ove by Fredrik Backman was started honestly at the recommendation of a friend and it's sheer popularity. It started with me really not liking Ove but by the end I loved this book! My only "complaint" is that it seemed to wrap up really neatly in the last couple of pages.
In Print I finished 2 books during this time span. I am down to just 3 more library books before reading from the stack ( at least the ones I can not find in audio). Dirt is Good: The Advantage of Germs for Your Child's Developing Immune System by Jack A. Gilbert, Rob Knight and Sandra Blakeslee. Maybe I like this book so much because it confirms my suspicion that we are to concerned with germs as a society. Our systems need a little dirt and a lot of microbes. I love biographies and auto-biographies which help lead to the next book, that and my favorite book is Where the Wild Things Are. There's a Mystery There: The Primal Vision of Maurice Sendak by Jonathan Cott was extremely interesting. Despite one of his books being my favorites I did not know anything about the author prior to this book. It was a great mix of his life, remembrances from friends and art work.

Third Week of February
Sunday: The boys requested spaghetti and meatballs for dinner so that is what we had.
Monday: Chicken Pot Pie from Footeprints using leftover chicken, end of some frozen peas and corn. I did not check on it in time and it was a bit brown.
Tuesday: Dinner out with my honey!
Wednesday: Pork Roast from the crock pot, steamed broccoli with cheese, and sweet potato fries.
Thursday: Instead of taquitos we had tacos. I did not get a picture of the food but got a picture of the one in the family who loves tacos. Used the leftover pork up .
Friday: Forgot the picture until I was almost done. Bacon, pancakes and scrambled eggs.
Saturday: 5 Ingredient Bacon Asparagus Pasta from Gimme Some Oven. I used chicken stock instead of the wine and leftover bacon.
Friday, March 2, 2018
Second Week of February
Sunday: Used leftovers to make tacos tonight. Clark wants me to take a picture of his food now when I take a picture of mine.
Monday: Mongolian Beef from Dinner Then Dessert with steamed rice . This was tasty but I hate frying in the house so it will not be in regular rotation.
Tuesday: 20-Minute Skillet Tuscan Tortellini from Chew Out Loud. Lot soupier than the recipe appears, also it was not as flavorful as I hoped. The few minutes everything is in the pan together is just not enough for the flavors to meld.
Wednesday: Pizza as I forgot we had an appt to get our taxes done.
Thursday: Wild Mushroom with Beef Stew from Girl and the Kitchen with egg noodles.
Friday: Roasted Chicken with Crispy Garlic Ranch Potatoes from The Real Food Dietician. I did not get a picture of dinner this night. We liked both of these items although I could have easily just used a packet of ranch on the potatoes rather than essentially making it from scratch.
Saturday: Black Pepper Chicken and Asparagus Stir Fry from Savory Spice rack with noodles. I thought it was way too tangy but Phillip liked it. I still think if I make it again I will cut the vinegar.
